Description

A warm, buttery coffee cake with a cinnamon streusel topping—a perfect treat for slow mornings and cozy gatherings.


Ingredients

  • 2 cups (240 g) all-purpose flour
  • 3/4 cup (150 g) granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1/2 cup (115 g) unsalted butter, softened
  • 2 large eggs, room temperature
  • 1 cup (240 g) sour cream (plain)
  • 1/2 cup (120 ml) whole milk, room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup (150 g) packed light brown sugar
  • 1/2 cup (60 g) all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 4 tablespoons (56 g) cold unsalted butter, cut into small cubes
  • 3/4 cup (90 g) powdered sugar (optional)
  • 12 tablespoons milk or cream (optional)
  • Pinch of vanilla or cinnamon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round pan or line with parchment.
  2. Make the streusel: In a bowl, combine brown sugar, 1/2 cup flour, and cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs. Chill while preparing the batter.
  3. In a medium bowl, whisk together 2 cups flour, baking powder, baking soda, and salt; set aside.
  4. In a large bowl, cream the softened butter and granulated sugar until light and fluffy (about 2-3 minutes). Add eggs one at a time, beating briefly after each addition. Stir in vanilla.
  5. Alternate adding the dry mixture and the sour cream/milk until just combined.
  6. Spread half the batter in the prepared pan. Sprinkle half the streusel over the batter.
  7. Drop spoonfuls of remaining batter over the streusel and gently spread. Sprinkle remaining streusel on top.
  8. Bake for 35-40 minutes, or until a toothpick inserted comes out with a few moist crumbs. Cool in pan for 20 minutes, then invert onto a plate.
  9. Optional: whisk powdered sugar with milk to make a glaze and drizzle over the cooled cake.

Notes

For a dairy-free version, use vegan butter and coconut yogurt. For lower sugar, reduce granulated sugar and streusel brown sugar slightly.
