These tender cookies offer a delightful balance of nutty almond flavor and gooey chocolate, perfect for any occasion.


Ingredients

  • 2 cups almond flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil or butter, melted
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together the almond flour, baking soda, and salt.
  3. In another bowl, combine the melted coconut oil (or butter), honey (or maple syrup), and vanilla extract until well blended.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms.
  5. Fold in the chocolate chips.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them apart.
  7. Bake for 10–12 minutes or until the edges are lightly golden.
  8. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For chewier cookies, flatten slightly before baking. Store in an airtight container for up to 3 days.
