Ingredients

  • 8 large eggs
  • 1/2 cup milk
  • 1 cup cooked potatoes, diced
  • 4 strips of bacon, cooked and crumbled
  • 1/2 cup onion, chopped
  • 1 cup cheese (cheddar or your choice), grated
  • Salt and pepper to taste
  • Olive oil or butter for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs and milk. Season with salt and pepper.
  3. In an oven-safe skillet, heat olive oil or butter over medium heat. Add chopped onion and cook until translucent.
  4. Add the diced potatoes and crumbled bacon to the skillet, mixing well.
  5. Pour the egg mixture over the potato and bacon mixture. Sprinkle the top with grated cheese.
  6. Cook on the stovetop for 2-3 minutes until the edges set, then transfer to the preheated oven.
  7. Bake for about 15-20 minutes until the frittata is set and lightly golden on top.
  8. Allow to cool slightly, then slice and serve.

Notes

Avoid overmixing the eggs for a light texture. Check for doneness by gently shaking the pan; if the center is firm, it’s ready!
