Description

A cozy morning delight featuring baked feta cheese, juicy tomatoes, and fresh spinach topped with eggs, perfect for brunch or quick dinners.

Ingredients

Scale
  • 1 block (8 oz) feta cheese
  • 6 large eggs
  • 1 pint cherry tomatoes, halved
  • 4 cups fresh spinach
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Optional: Fresh herbs (oregano, basil) for added flavor

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, place the block of feta cheese in the center and surround it with halved cherry tomatoes and fresh spinach.
  3. Drizzle with olive oil and season with salt, pepper, and any herbs you like.
  4. Crack the eggs over the feta and vegetables, ensuring even distribution.
  5. Bake for about 20-25 minutes, or until the eggs are set and the feta is golden on the edges.
  6. Serve warm, perhaps with crusty bread to soak up the delicious juices, and enjoy!

Notes

Tip: To avoid overcooking the eggs, check them at 20 minutes and remove when the whites are just set and the yolks still have a touch of jiggle.
