A soft and moist banana bread topped with a silky chocolate ganache, perfect for cozy mornings or special treats.
Ingredients

- 3 ripe bananas, mashed (about 1 1/2 to 1 3/4 cups)
- 1/3 cup (5 1/3 tbsp) unsalted butter, melted and slightly cooled
- 3/4 cup granulated sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt (about 1/8 tsp)
- 1 cup (120 g) all-purpose flour
- 1/2 cup semi-sweet chocolate chips (optional)
- Ganache: 4 oz (115 g) semi-sweet chocolate, finely chopped
- 1/2 cup (120 ml) heavy cream
- 1 tablespoon unsalted butter (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- Mash the ripe bananas in a large bowl and stir in melted butter.
- Mix in sugar, beaten egg, and vanilla until combined.
- Sprinkle baking soda and salt over the mixture, then stir. Add flour and gently fold in.
- Pour batter into prepared pan and bake for 55–65 minutes, until a toothpick comes out with a few moist crumbs.
- Let the loaf cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
- Prepare ganache by heating cream, pouring it over chopped chocolate, then stirring until smooth. Stir in butter for sheen (if using) and let cool slightly.
- Pour ganache over the cooled loaf and spread to the edges.
Notes
Use very ripe bananas for best flavor. Cool loaf completely before glazing.
