Description

A cozy and delicious banana bread with walnuts and a hint of cinnamon, perfect for breakfast or dessert.


Ingredients

  • 3 ripe bananas (mashed)
  • 1/3 cup (76 g) melted butter
  • 1 cup (200 g) granulated sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups (187.5 g) all-purpose flour
  • 1 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment for easy removal.
  2. In a large bowl, mash the ripe bananas until smooth with a few small chunks for texture. Stir in the melted butter.
  3. Add the sugar, beaten egg, and vanilla; mix until combined.
  4. Sprinkle the baking soda, salt, and cinnamon over the wet mixture and stir.
  5. Gently fold in the flour until just combined — stop as soon as you see no streaks of flour. Overmixing will make the loaf tough.
  6. Fold in the chopped walnuts, reserving a few to scatter on top if you like a decorative crunch.
  7. Pour the batter into the prepared loaf pan and smooth the top. Scatter reserved walnuts on top.
  8. Bake for 55–65 minutes, rotating the pan halfway through. Start checking at 50 minutes: a toothpick inserted into the center should come out with a few moist crumbs but not wet batter. An internal temperature near 200–205°F (93–96°C) is a reliable doneness cue.
  9. If the top browns too quickly, tent loosely with foil for the last 10–15 minutes.
  10. Cool in the pan for 10–15 minutes, then remove and cool completely on a wire rack before slicing to set the crumb.

Notes

Use very ripe bananas for best flavor. Store in an airtight container for 2 days at room temperature or refrigerate for up to 5 days.
