- 1/2 cup tomatoes, seeded and finely chopped (about 80 g)
- 1/4 cup fresh basil, chopped (about 10 g)
- 2 tablespoons balsamic vinaigrette glaze or balsamic reduction
- Pita chips, crackers, or thinly sliced baguette, for serving
- Optional: 6 oz whipped cream cheese + 2 tbsp fresh grated Parmesan
- Optional: 1 small garlic clove, grated
- Optional: high-quality aged balsamic vinegar
Instructions
- Choose your platter: pick a large plate or small shallow platter so guests can access the dip easily.
- Soften the cheese: if the cheese is firm, let it sit at room temperature for 10–15 minutes so it spreads easily.
- Spread the base: using a small spatula or butter knife, spread the soft cheese evenly across the center of the plate. Leave about a 1/4-inch clean border around the edge for presentation.
- Add tomatoes: evenly sprinkle and gently spread the chopped tomatoes over the surface of the cheese for an even layer.
- Scatter the basil: sprinkle chopped fresh basil across the tomatoes and press lightly so it adheres.
- Drizzle the glaze: drizzle the balsamic glaze back and forth over the whole plate.
- Serve immediately: arrange pita chips, crackers, or slices of toasted baguette around the platter.
Notes
For a dairy-free option, use a thick vegan cream-cheese alternative. Don’t overdo the tomatoes to avoid a watery dip.
