  • 2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 packages (8 ounces each) cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups apples, peeled and diced
  • 1 cup caramel sauce
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. In a medium bowl, combine the graham cracker crumbs, 1/2 cup sugar, and melted butter. Press the mixture firmly into the bottom of the prepared pan.
  3. In a large mixing bowl, beat the cream cheese and 1 cup sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Fold in the diced apples and ground cinnamon gently to avoid breaking down the apples too much.
  5. Pour the cream cheese mixture over the crust in the baking pan. Drizzle with caramel sauce.
  6. Bake for 30-35 minutes or until the center is set—check doneness by lightly shaking the pan; the center should be slightly jiggly but not liquid.
  7. Let cool, then chill in the refrigerator for at least 2 hours before slicing into bars and serving.

Allow ample cooling time to enhance the overall taste. Store in an airtight container in the fridge for 5-7 days.
