- 1 1/2 cups finely grated Parmesan cheese
- 2 tablespoons unsalted butter
- 1 1/2 teaspoons freshly cracked black pepper
- 1 tablespoon salt (for pasta water)
- 3/4 cup reserved pasta water
Instructions
- Grate the Parmesan and set it aside in a bowl.
- Bring a large pot of water to a boil and add salt, then cook spaghetti until al dente (8–10 minutes).
- Reserve 3/4 cup of pasta water before draining the spaghetti.
- In a skillet over medium heat, melt the butter.
- Add the cracked black pepper to the skillet and toast for about 1 minute.
- Pour in the reserved pasta water and bring to a gentle simmer.
- Gradually whisk in the Parmesan until the sauce is smooth.
- Add the cooked spaghetti and toss to coat. Allow it to rest for a minute before serving.
- Adjust seasoning with more pepper or cheese as desired.
- Serve immediately with extra Parmesan and cracked black pepper on the side.
Notes
Use freshly cracked pepper and hot pasta water for the best results. This dish can be adapted with various ingredients for different flavor profiles.
