Description

A delicious Taco Bell-inspired mashup of quesadilla and burrito featuring seasoned beef, melted cheese, and rice wrapped in a crispy tortilla.


Ingredients

  • 1 lb ground beef (85% lean recommended)
  • 1 cup cooked white rice
  • 2 cups shredded cheddar cheese
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 4 large flour tortillas (burrito size)
  • Sour cream, for serving (optional)
  • Salsa, for serving (optional)

Instructions

  1. In a skillet, brown the ground beef over medium heat. Drain excess fat.
  2. Add the taco seasoning and the amount of water directed on the packet (or about 1/4 cup if using dry seasoning). Stir in the cooked rice until well combined. Heat through for 1–2 minutes.
  3. Lay a flour tortilla flat and add a layer of the beef-and-rice mixture, followed by a generous sprinkle of shredded cheese.
  4. Roll the tortilla tightly, folding in the edges as you go to form a wrap.
  5. Repeat with the remaining tortillas and filling.
  6. Heat a skillet over medium heat and place the rolled quesaritos seam side down. Cook until golden brown and crispy, about 2–3 minutes per side.
  7. Slice in half and serve with sour cream and salsa on the side.

Notes

For a milder sodium profile, use low-sodium taco seasoning. Wrap tortillas briefly in the microwave to prevent cracking while rolling.
