Ingredients

- 2 cups cooked chicken breast, shredded (about 280 g / 10 oz)
- 1 medium avocado, mashed (about 150 g / 5 oz)
- 1 cup shredded cheddar cheese (about 113 g / 4 oz)
- 4 slices of bread (whole-wheat, sourdough, or your favorite)
- 2 tablespoons butter, softened
- Salt and freshly ground black pepper, to taste
Instructions
- In a bowl, mix the shredded chicken and mashed avocado. Season with salt and pepper.
- Spread butter on one side of each slice of bread.
- On the unbuttered side, layer some of the chicken-avocado mixture and top with shredded cheese.
- Close the sandwich with another slice of bread, buttered side up.
- Heat a skillet over medium heat and grill the sandwich until golden brown, about 3–4 minutes on each side, or until the cheese is melted.
- Slice and serve warm.
Notes
Adjust portions to lower calories or sodium. Avoid overmixing the chicken and avocado to retain texture.
