Description

A refreshing summer beverage combining cucumber and lemon for a revitalizing drink.


Ingredients

  • 1 large cucumber, peeled and chopped
  • 1/2 cup fresh lemon juice
  • 1/4 cup honey or sweetener of choice (to taste)
  • 4 cups water
  • Ice cubes
  • Mint leaves for garnish (optional)

Instructions

  1. In a blender, combine the chopped cucumber and 2 cups of water. Blend until smooth.
  2. Strain the cucumber juice through a fine-mesh sieve or cheesecloth into a pitcher.
  3. Add the lemon juice, honey, and remaining 2 cups of water to the pitcher. Stir well to combine.
  4. Taste and adjust sweetness if necessary; feel free to add more honey or lemon juice to suit your taste.
  5. Serve over ice and garnish with mint leaves if desired.
