Ingredients

  • 1 (9-inch) pie crust (homemade or store-bought)
  • 4 large eggs
  • 3/4 cup (150 g) granulated sugar
  • 1 1/2 cups (360 ml) whole milk
  • 1 cup (240 ml) heavy cream
  • 1 1/2 tsp ground cinnamon (or 1 cinnamon stick, steeped)
  • 2 tsp pure vanilla extract (or seeds from 1 vanilla bean)
  • Pinch of salt
  • Optional: 1/4 tsp ground nutmeg, 1 tsp finely grated orange zest for holiday flair

Instructions

  1. Preheat oven to 375°F (190°C) and pre-bake the crust for 20 minutes.
  2. Combine milk and heavy cream with cinnamon and vanilla in a saucepan and heat until steaming.
  3. Whisk eggs, sugar, and a pinch of salt until smooth.
  4. Temper the egg mixture with the hot milk and strain into a jug.
  5. Pour the custard into the pre-baked crust and bake at 325°F (160°C) for 35-40 minutes.
  6. Allow to cool to room temperature, then refrigerate for at least 2 hours before slicing.

Notes

For best results, avoid overbaking and be careful with tempering the eggs. Use fresh eggs for richer flavor.
