A warm and comforting blend of churro and cheesecake flavors in a baked oatmeal form, perfect for breakfast or brunch.

- 1 cup rolled oats
- 2 cups milk (or milk substitute)
- 1/2 cup cream cheese, softened
- 1/4 cup brown sugar, packed
- 1/4 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 tbsp butter, melted
- 1/4 cup granulated sugar (for topping)
- 1 tsp cinnamon (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a bowl, combine rolled oats, milk, baking powder, cinnamon, and salt. Stir well and let sit for 5 minutes.
- In another bowl, beat the cream cheese until smooth. Add brown sugar, 1/4 cup granulated sugar, eggs, vanilla extract, and melted butter, mixing until creamy.
- Layer half of the oat mixture into the prepared dish. Spread the cream cheese mixture evenly on top.
- Add the remaining oat mixture over the cream cheese and gently swirl together.
- Mix the remaining 1/4 cup sugar and 1 tsp cinnamon for the topping. Sprinkle it evenly over the dish.
- Bake for 30–35 minutes until the edges are golden brown and center is set but slightly jiggly. Let cool for 10–15 minutes to allow for cleaner slices.
Notes
For a lighter version, replace some cream cheese with Greek yogurt. For dairy-free, use plant-based milk and cream cheese.
