- 2 cups white granulated sugar
- 4 cups all-purpose flour
- 2 tablespoons baking powder
- 1 teaspoon salt
- 2 large eggs
- 2 cups milk
- 2/3 cup vegetable oil
- 2 tablespoons ground cinnamon
- 1 teaspoon vanilla extract (optional)
- 1/2 cup chopped nuts (walnuts or pecans) (optional)
- 1/2 cup raisins or dried cranberries (optional)
Instructions
- Preheat the oven to 350°F (177°C) and grease loaf pans.
- In a medium bowl, whisk together sugar, flour, baking powder, and salt; set aside.
- In a large bowl, beat eggs, milk, and vegetable oil until combined. If using, add vanilla extract.
- Gradually add the dry mixture to the wet ingredients until just moistened.
- Pour batter into prepared pans, filling two-thirds full.
- Mix additional cinnamon with sugar in a small bowl; sprinkle onto batter and swirl gently with a knife.
- Bake for about 40 minutes or until a toothpick comes out clean.
- Cool in the pan for 10-15 minutes, then transfer to a wire rack to cool further.
Notes
Avoid overmixing to ensure a tender crumb. If the top browns too quickly, tent with foil during the last minutes of baking.
