- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup (113 g) unsalted butter, softened
- 1/2 cup (100 g) granulated sugar
- 1/2 cup (110 g) brown sugar, packed
- 1 large egg
- 2 teaspoons vanilla extract
- For the filling:
- 1/2 cup (110 g) brown sugar, packed
- 2 teaspoons ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking powder, salt, and 1 teaspoon of cinnamon until combined.
- In a separate bowl, cream the butter with both sugars until light and fluffy, about 2-3 minutes.
- Add the egg and vanilla, mixing until smooth.
- Gradually add the dry ingredients until just combined, avoiding overmixing.
- Prepare the filling by mixing the remaining brown sugar and cinnamon in a small bowl.
- Turn half of the dough onto parchment, roll into a rectangle, and sprinkle half the filling over it.
- Layer the rest of the dough on top, roll tightly into a log, and slice into rounds.
- Place on the baking sheet with spacing and bake for 10-12 minutes until golden on edges.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Glaze if desired.
Notes
For richer cookies, add 1/4 cup cream cheese to the dough and reduce butter by 2 tablespoons. These cookies freeze well and are perfect for gifting.
