- 2 cups packed brown sugar (about 440 g)
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour (about 240 g)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon ground cinnamon (for batter)
- 1/2 cup granulated sugar (for topping)
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a 9×13-inch baking dish for easy removal.
- In a large bowl, whisk the melted butter and brown sugar together until well combined and glossy.
- Add the eggs and vanilla extract; mix until smooth and homogenous. Avoid overbeating.
- In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon.
- Gradually fold the dry ingredients into the wet mixture until just combined — a few streaks are better than overmixing.
- Pour the batter into the prepared baking dish and spread it evenly with a spatula.
- Sprinkle the top with the granulated sugar and, if you like, an extra pinch of cinnamon for contrast.
- Bake for 20–25 minutes or until the edges are golden and a toothpick inserted into the center comes out with a few moist crumbs. Check at 18 minutes if your oven runs hot.
- Allow the blondies to cool completely in the pan before cutting into 12 squares.
