Ingredients

  • 1 cup unsalted butter, melted
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a large bowl, mix the melted butter, brown sugar, and granulated sugar until well combined.
  3. Add the eggs and vanilla extract, mixing until smooth.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Avoid overmixing to keep the blondies soft.
  6. Pour the batter into the prepared baking pan and spread it evenly.
  7. Mix the remaining 1/4 cup of granulated sugar with a bit of cinnamon, and sprinkle on top of the batter before baking.
  8. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow to cool before cutting into squares and serving.
