  • 2 tbsp olive oil
  • 4 tbsp butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup whole milk
  • 1 1/4 cups parmesan, shredded or freshly grated
  • Parsley, chopped (optional)
  • Red pepper flakes (optional)
  • Cracked black pepper (optional garnish)

Instructions

  1. Cook the tortellini: In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and set aside.
  2. Prepare the steak: Season the steak with salt, black pepper, garlic powder, and smoked paprika.
  3. Sear the steak: In a large skillet, heat olive oil over medium-high heat. Sear the steak for about 4-5 minutes per side or until it reaches your desired doneness. Remove from the skillet and let it rest.
  4. Make the cream sauce: In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 1-2 minutes until fragrant.
  5. Combine dairy: Reduce heat to low, and slowly whisk in heavy cream and whole milk. Stir continuously until well combined and heated through.
  6. Add cheese: Gradually add the grated parmesan cheese, stirring until melted and the sauce turns creamy.
  7. Combine all ingredients: Slice the rested steak into bite-sized pieces. Add the cooked tortellini and sliced steak to the sauce, tossing gently to coat.
  8. Serve and garnish: Serve immediately, garnished with chopped parsley and a sprinkle of red pepper flakes.

Notes

Avoid overmixing the tortellini in the sauce to maintain their shape. Serve in shallow bowls for an elegant presentation.
