- 48 Ritz crackers
- 1 (8 oz) block cream cheese, softened
- 1/2 cup shredded sharp cheddar cheese (about 2 oz)
- 1/4 cup finely chopped chives
- 1/4 cup finely chopped red bell pepper
- 1/4 teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
Instructions
- Finely chop the chives and red bell pepper. Shred the cheddar if not pre-shredded. Soften cream cheese to room temperature for easy mixing.
- In a medium bowl, add the softened cream cheese, shredded cheddar, chopped chives, red bell pepper, garlic powder, and a pinch of salt and black pepper.
- Use a spatula or hand mixer on low speed to blend until evenly combined and smooth. Avoid overmixing.
- Spread about 1 teaspoon of the cheese mixture onto one Ritz cracker, then top with a second cracker to form a sandwich. Press gently to adhere.
- Continue until all crackers and filling are used, yielding approximately 24 sandwiches.
- Optionally garnish with extra chopped chives. Serve chilled or at room temperature.
Notes
