- 48 Ritz crackers (or same-style buttery crackers)
- 1 (8 oz / 226 g) block full-fat cream cheese, softened
- 1/2 cup (about 56 g) shredded sharp cheddar cheese
- 1/4 cup finely chopped chives (about 15 g)
- 1/4 cup finely chopped red bell pepper (about 37 g)
- 1/4 teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
Instructions
- Soften the cream cheese: Leave the block at room temperature for 20-30 minutes or microwave in short increments until soft.
- Combine the filling: In a medium bowl, add cream cheese, cheddar, chives, bell pepper, garlic powder, and a pinch of salt and pepper.
- Mix gently: Use a spatula or hand mixer on low to combine until spreadable.
- Build the sandwiches: Spread approximately 1 teaspoon of filling on one cracker, then top with a second cracker.
- Repeat until all crackers and filling are used, making about 24 sandwiches.
- Garnish and chill: Optionally garnish with chopped chives and chill for 15-30 minutes or serve immediately.
Notes
Can make ahead by piping filling and refrigerating for up to 24 hours. Adjust salt based on cracker type.
