Ingredients

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth (low-sodium preferred)
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and fresh ground black pepper, to taste
  • ¼ cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, garlic powder, and Italian seasoning. If breasts are uneven in thickness, gently pound to an even ¾–1-inch thickness for even cooking.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. When hot, add chicken breasts (don’t crowd the pan) and sear 4–6 minutes per side until golden brown. Chicken will not be fully cooked through — remove to a plate and tent loosely with foil.
  3. Reduce heat to medium. In the same pan, add minced garlic and sauté for 30–45 seconds until fragrant (don’t let it burn).
  4. Pour in ½ cup chicken broth and scrape up browned bits from the pan with a wooden spoon. Let the broth reduce slightly for 1–2 minutes. Add a splash of white wine here and let it evaporate (optional).
  5. Stir in 1 cup heavy cream. Bring to a gentle simmer, then lower heat. Add ¼ cup grated Parmesan and whisk until melted and smooth. Simmer for 2–4 minutes until the sauce slightly thickens. Taste and adjust seasoning.
  6. Return the seared chicken breasts to the skillet, spooning sauce over them. Simmer uncovered for another 5–8 minutes, or until internal temperature reaches 165°F (74°C).
  7. Remove from heat, sprinkle chopped fresh parsley over the chicken, and serve immediately.

Notes

Pair with pasta, rice, or vegetables for a complete meal. Store in an airtight container in the fridge for 3-4 days or freeze for 2-3 months.
