  • ½ cup full-fat mayonnaise
  • 3 tbsp Greek yogurt
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 2 tbsp lemon juice
  • ¼ cup Parmesan cheese (freshly grated)
  • 12 garlic cloves (minced)
  • ¼ tsp black pepper
  • Pinch sea salt
  • For the Chicken:
  • 5 chicken cutlets
  • Sea salt (to taste)
  • Ground black pepper (to taste)
  • Oil (for frying)
  • ⅓ cup all-purpose flour
  • ½ tsp salt
  • ¾ tsp smoked paprika
  • 2 eggs
  • ¼ tsp salt
  • ¾ cup panko crumbs
  • ¼ cup breadcrumbs
  • 1 tsp dried parsley
  • ½ tsp ground black pepper
  • ½ tsp sea salt
  • ½ tsp dried oregano
  • 1 tsp garlic powder
  • ¼ cup Parmesan cheese (freshly grated)
  • For Assembly:
  • 2 romaine hearts (chopped)
  • 12 French baguettes
  • Additional Parmesan cheese (for garnish)

Instructions

  1. Prepare the Dressing: In a mixing bowl, blend all dressing ingredients until smooth and creamy. Reserve 4-5 tablespoons for the salad, mixing the remainder with chopped romaine lettuce. Refrigerate both.
  2. Prepare the Chicken: Place chicken cutlets on a cutting board and pound to an even thickness. Season both sides generously with salt and pepper.
  3. Setup Breading Station: Arrange three shallow plates. Combine flour, salt, and smoked paprika in the first. Whisk eggs with salt in the second. In the third, mix panko, breadcrumbs, dried parsley, ground black pepper, salt, dried oregano, garlic powder, and Parmesan cheese.
  4. Bread the Chicken: Heat oil in a frying pan over medium heat. Dredge a chicken cutlet in the flour mixture, dip in the egg mixture, and press into the breadcrumb mix. Repeat for all cutlets.
  5. Fry the Chicken: Test the oil by dropping in breadcrumbs—if they sizzle, it’s ready. Fry the chicken until golden brown, about 4-5 minutes on each side. Drain on a wire rack.
  6. Assemble the Sandwich: Slice the baguettes, spread the reserved Caesar dressing, place a crispy chicken cutlet on top, add Caesar salad, and top with extra Parmesan. Serve immediately with fries.

Notes

Do not overcrowd the frying pan to ensure the chicken crisps evenly. You can check chicken doneness by cutting it open—the juices should run clear.
