  • 2 large eggs
  • 2 cups Panko breadcrumbs
  • 2 teaspoons Italian seasoning
  • 12 ounces low moisture mozzarella cheese, cut into pieces (3-inch x ¾-inch or string cheese cut in half)
  • Homemade marinara, for dipping (about ½ cup)
  • 1 quart vegetable oil (for frying)

Instructions

  1. Prepare three shallow bowls: mix flour, 1 teaspoon sea salt, black pepper, and garlic powder in Bowl 1; beat the eggs in Bowl 2; combine Panko and Italian seasoning (and optional Parmesan) in Bowl 3.
  2. Cut the mozzarella into specified sticks and pat dry to remove excess moisture.
  3. Dredge each mozzarella stick in the seasoned flour, dip in eggs, and roll in the Panko mixture. For extra crispiness, repeat the egg and Panko step.
  4. Place coated sticks on a baking sheet lined with parchment and freeze for at least 30 minutes.
  5. Heat oil in a deep fryer or heavy-bottomed pot to 375°F (190°C).
  6. Fry sticks in batches until golden brown, about 30 seconds per side. Drain on a rack or paper towels and sprinkle with salt if desired.
  7. Serve immediately with warm marinara sauce for dipping.
