Warm sandwiches featuring tender roast beef, caramelized onions, and melted Swiss cheese, perfect for dipping in au jus.

- 12 slider buns (split; dinner roll size)
- 1 lb (450 g) thinly sliced roast beef (freshly carved or deli-style)
- 2 large yellow onions, thinly sliced
- 2 tbsp olive oil (for caramelizing onions)
- 10–12 slices Swiss cheese (about 8–12 oz, enough to cover layers)
- 2 cups beef au jus (store-bought or homemade)
- 2 tbsp unsalted butter, melted (for brushing tops)
- Salt and freshly ground black pepper, to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Slice the slider buns horizontally and lay the bottom halves in a baking dish large enough for 12 sliders.
- Heat the olive oil in a skillet over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until deeply softened and caramelized (about 25–30 minutes). Reduce heat as needed to prevent burning.
- Layer the roast beef evenly over the bottom buns.
- Spread the caramelized onions over the roast beef.
- Layer Swiss cheese over the onions and beef (cover as evenly as possible).
- Place the top halves of the buns over the cheese.
- Brush the tops with melted butter and a little cracked black pepper.
- Bake for about 15–20 minutes, until cheese is fully melted and the buns are lightly golden on top.
- Warm the au jus in a small saucepan or microwave until hot; keep it ready for dipping.
- Serve the sliders warm on a platter with individual or shared bowls of au jus for dipping.
Notes
For lower-calorie options, swap regular slider buns for whole-grain rolls and use reduced-fat cheese. If using deli roast beef, pat dry to reduce excess moisture.
