- 1 pound (454 g) ground beef (85% lean recommended)
- 1 cup uncooked long-grain white rice (about 185 g)
- 3 cups low-sodium beef broth
- 1 small onion, diced (about 1/2 to 3/4 cup)
- 4 cloves garlic, minced
- 3 tablespoons unsalted butter, divided
- 1 cup shredded cheddar cheese (about 113 g)
- 1/2 cup grated Parmesan cheese (about 50 g)
- 1/2 cup whole milk
- Salt, to taste
- Black pepper, to taste
- 1 teaspoon Italian seasoning
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Heat 1 tablespoon of butter in a large skillet over medium heat. Add the diced onion and cook for 3 to 4 minutes until softened and translucent.
- Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Combine the uncooked rice, beef broth, Italian seasoning, salt, and pepper in the skillet. Bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes.
- Melt the remaining 2 tablespoons of butter in a small saucepan, add the milk, cheddar, and Parmesan cheese, whisking until smooth.
- Pour the cheese sauce into the beef and rice mixture. Stir to combine.
- Cook uncovered for 2–3 more minutes to thicken slightly. Adjust seasoning as needed.
- Sprinkle with chopped parsley before serving if desired.
Notes
For a spicier dish, add red pepper flakes; for a vegetarian version, replace beef with lentils and use vegetable broth.
