Description

A cozy and comforting gluten-free banana bread with a tender crumb and caramelized crust, perfect for any occasion.


Ingredients

  • 3 ripe bananas, mashed (about 1 1/2 cups)
  • 1/3 cup (about 76 g) melted coconut oil
  • 1/2 cup (100 g) granulated sugar or 1/3 cup honey
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups gluten-free all-purpose flour blend
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and lightly dust with gluten-free flour or line with parchment.
  2. In a large bowl, mash the bananas until mostly smooth with a few small chunks for texture.
  3. Stir in the melted coconut oil and granulated sugar (or honey) until combined.
  4. Add the eggs and vanilla; whisk until smooth and slightly glossy.
  5. Sprinkle the baking soda, salt, and ground cinnamon over the wet mixture and stir briefly.
  6. Fold in the gluten-free all-purpose flour until just combined — do not overmix.
  7. If using, fold in the nuts and/or chocolate chips.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 50–60 minutes, or until a toothpick inserted comes out with a few moist crumbs.
  10. Allow the loaf to cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use very ripe bananas for best flavor. Check doneness near the lower end of the baking time to avoid a dry loaf.
