Ingredients

  • 2 cups gluten-free all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1 cup packed brown sugar
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 ½ cups semi-sweet chocolate chips
  • 1 teaspoon xanthan gum (only if your GF blend lacks it)
  • ½ cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together the gluten-free flour, baking soda, and salt in a medium bowl. If your GF blend lacks xanthan gum, add 1 teaspoon now.
  3. In a large bowl, cream the softened butter with brown sugar and granulated sugar until light and fluffy (about 2–3 minutes).
  4. Beat in the vanilla extract, then add the eggs one at a time, mixing until fully incorporated.
  5. Gradually add the dry ingredients to the wet mixture and mix on low just until combined.
  6. Fold in the semi-sweet chocolate chips and any optional nuts or add-ins.
  7. Scoop dough onto the prepared baking sheets, leaving about 2 inches between cookies.
  8. Bake for 10–12 minutes, or until the edges are golden and centers look set but still soft.
  9. Let cookies cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For a richer flavor, chill the dough for 20–30 minutes before baking, and rotate pans halfway through for even browning.
