Ingredients

  • 2 cups cooked quinoa
  • 1 lb chicken breast, diced
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 red onion, diced
  • 1/4 cup olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup Greek yogurt
  • 1 cucumber, grated
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice

Instructions

  1. In a bowl, combine the diced chicken, olive oil, oregano, salt, and pepper. Mix well to ensure the chicken is evenly coated.
  2. Heat a skillet over medium heat and cook the chicken for 6-8 minutes, or until cooked through and golden brown. Set aside.
  3. In another bowl, mix together the tzatziki ingredients—Greek yogurt, grated cucumber, minced garlic, lemon juice, and salt and pepper. Refrigerate until ready to use.
  4. To assemble your bowls, layer the cooked quinoa at the base, followed by the sautéed chicken and an assortment of fresh veggies.
  5. Top with crumbled feta cheese and sliced olives, creating a colorful and appetizing presentation.
