Ingredients

  • 1 pound ground beef (80/20 recommended)
  • 1 medium onion, thinly sliced
  • 1 medium green bell pepper, thinly sliced
  • 1 cup mushrooms, sliced (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce
  • Salt, to taste
  • Black pepper, to taste
  • 4 slices provolone cheese (or any cheese of your preference)
  • 4 hoagie rolls
  • Olive oil, for cooking

Instructions

  1. Slice the onion, bell pepper, and mushrooms. Split the hoagie rolls without cutting completely through.
  2. Drizzle 1 tablespoon olive oil into a large skillet and heat over medium-high until shimmering.
  3. Add sliced onions and bell peppers to the skillet. Sauté for 3–5 minutes until tender and slightly caramelized. Add mushrooms (if using) and cook for 2–3 more minutes.
  4. Push veggies to one side of the skillet. Add ground beef to the open space, break it apart, and cook until no longer pink, about 5–7 minutes.
  5. Mix the beef and vegetables together. Stir in 1 tsp garlic powder, 1 tsp Worcestershire sauce, salt, and pepper to taste. Cook for 1–2 minutes to meld flavors.
  6. Reduce heat to low. Lay a slice of provolone over each quarter of the beef mixture or cover the skillet with slices and a lid. Allow cheese to melt, about 2–3 minutes.
  7. Lightly butter and toast the rolls in a separate pan for extra texture (optional).
  8. Spoon the cheesy beef-and-veg mixture into each roll.
  9. Serve immediately while melty.

Notes

Consider using leaner ground beef for less fat, substituting provolone with American, Swiss, or pepper jack cheese, or adding spices for a kick. Leftovers can be stored in the fridge for 3-4 days and reheated gently.
