- 2 cups corn, cooked (fresh grilled or canned and drained)
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/2 cup red onion, diced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime (about 2 tablespoons)
- Salt and pepper to taste
- 1 teaspoon chili powder (or to taste)
- 1/2 cup cotija cheese, crumbled (optional)
Instructions
- In a large bowl, combine the cooked shredded chicken, cooked corn, diced red bell pepper, diced avocado, diced red onion, and chopped cilantro.
- Squeeze the lime juice evenly over the mixture. Season with salt, pepper, and chili powder.
- Toss gently to combine, being careful not to mash the avocado—use a light folding motion.
- Taste and adjust seasoning: more lime for brightness, extra chili powder for heat, or a pinch of salt to bring forward the flavors.
- Serve the mixture in bowls and sprinkle with crumbled cotija cheese if desired.
Notes
Avoid overmixing after adding avocado to keep the cubes intact. If using fresh corn, char it briefly in a hot skillet for extra flavor.
