- 2 cups all-purpose flour
- 2 cups granulated sugar
- 2 large eggs
- 1 teaspoon baking soda
- 1 pinch salt
- 1 teaspoon vanilla extract
- 1 can (20 oz) crushed pineapple in juice
- 1/2 cup unsalted butter
- 1 package (8 oz) cream cheese, softened
- 1 teaspoon vanilla extract (for frosting)
- 1 1/2 cups confectioners’ sugar
- 1 cup chopped nuts (optional)
- Coconut flakes (for topping)
Instructions
- Preheat the oven to 350°F (175°C) and prepare a 9×13-inch pan.
- In a large bowl, whisk together flour, sugar, baking soda, and salt.
- In a separate bowl, beat eggs with vanilla extract, then stir in crushed pineapple with juice.
- Pour the wet mixture into the dry ingredients and fold gently to combine.
- Pour the batter into the prepared pan and sprinkle nuts on top if desired.
- Bake for 30–35 minutes or until a toothpick comes out with a few moist crumbs.
- Remove from the oven and let cool.
- For the frosting, beat butter and cream cheese until smooth, then add vanilla and confectioners’ sugar.
- Spread the frosting over the cooled cake and top with coconut flakes.
Notes
Cool the cake before frosting to prevent the cream cheese frosting from melting.
