Ingredients

  • 2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 teaspoon vanilla extract
  • 1 can (20 oz) crushed pineapple in juice
  • 1/2 cup unsalted butter
  • 1 package (8 oz) cream cheese, softened
  • 1 teaspoon vanilla extract (for frosting)
  • 1 1/2 cups confectioners’ sugar
  • 1 cup chopped nuts (optional)
  • Coconut flakes (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×13-inch pan.
  2. In a large bowl, whisk together flour, sugar, baking soda, and salt.
  3. In a separate bowl, beat eggs with vanilla extract, then stir in crushed pineapple with juice.
  4. Pour the wet mixture into the dry ingredients and fold gently to combine.
  5. Pour the batter into the prepared pan and sprinkle nuts on top if desired.
  6. Bake for 30–35 minutes or until a toothpick comes out with a few moist crumbs.
  7. Remove from the oven and let cool.
  8. For the frosting, beat butter and cream cheese until smooth, then add vanilla and confectioners’ sugar.
  9. Spread the frosting over the cooled cake and top with coconut flakes.

Notes

Cool the cake before frosting to prevent the cream cheese frosting from melting.
