Description

A delicious and decadent Italian Love Cake made with layers of chocolate cake and creamy ricotta, topped with chocolate pudding frosting.


Ingredients

  • 2 (15-ounce) containers of ricotta cheese
  • 1 cup of granulated sugar
  • 1 teaspoon of vanilla extract
  • 4 large eggs (room temperature)
  • 1 (15.25-ounce) box of chocolate or devil’s food cake mix
  • 1/2 cup canola or vegetable oil
  • 1 cup of water
  • 3 large eggs
  • 1 (5-ounce) box of instant chocolate pudding
  • 3 cups of cold milk
  • 1 (8-ounce) container of whipped topping, thawed

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 baking dish with cooking spray and set aside.
  2. Prepare the Ricotta Layer: In a large bowl, combine the ricotta cheese, sugar, and vanilla extract. Add the eggs one at a time, mixing until smooth and well-blended. Set aside.
  3. Make the Cake Layer: In another bowl, mix together the chocolate cake mix, oil, water, and eggs until just combined—avoid overmixing.
  4. Layering: Pour half of the chocolate cake batter into the prepared baking dish. Carefully spread the ricotta mixture over the first layer, and finish by pouring the remaining chocolate cake batter on top.
  5. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the cake cools, prepare the chocolate pudding frosting: In a mixing bowl, whisk together the instant chocolate pudding and cold milk until thickened. Fold in the whipped topping until well combined.
  7. Once the cake has cooled completely, spread the chocolate pudding frosting evenly over the top.
  8. Refrigerate for at least 2 hours before serving to allow the flavors to meld beautifully.

Notes

Serve chilled, garnished with powdered sugar and a side of ice cream or whipped cream.
