- 1 cup strong brewed coffee (cooled)
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup butter, melted (1 stick)
- 2 large eggs
- 1 cup milk (whole or 2% recommended)
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup chocolate chips (optional)
- 1/2 cup powdered sugar (for glaze, optional)
- 2 tablespoons brewed coffee (for glaze, optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk to aerate and remove lumps.
- In another bowl, whisk together the brewed coffee, melted butter, eggs, and milk. Make sure the coffee is not hot.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in chocolate chips if using.
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- Bake for 18–20 minutes or until a toothpick inserted comes out clean.
- For the glaze, mix the powdered sugar with brewed coffee until smooth and drizzle over the cooled muffins.
Notes
Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days. Freeze for up to 3 months.
