Ingredients

  • 3 to 4 pounds of beef chuck roast
  • 2 large onions, sliced
  • 1 packet of French onion soup mix
  • 4 cups beef broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (like thyme or rosemary), optional

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat.
  3. Season the roast with salt and pepper, then sear it on all sides until browned.
  4. Remove the roast and set it aside.
  5. Add sliced onions to the pot and sauté until they start to caramelize, about 5-10 minutes.
  6. Stir in the French onion soup mix and beef broth, scraping any browned bits from the bottom of the pot.
  7. Return the roast to the pot, cover it, and place it in the preheated oven.
  8. Cook for 3 to 4 hours, or until the meat is tender and easily pulls apart with a fork.
  9. Serve with the onion gravy and enjoy your cozy meal!

Notes

Be careful not to overcrowd your pot when searing the meat; it’s better to do it in batches if your pot isn’t large enough.
