- 3 to 4 pounds of beef chuck roast
- 2 large onions, sliced
- 1 packet of French onion soup mix
- 4 cups beef broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (like thyme or rosemary), optional
Instructions
- Preheat your oven to 325°F (163°C).
- In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat.
- Season the roast with salt and pepper, then sear it on all sides until browned.
- Remove the roast and set it aside.
- Add sliced onions to the pot and sauté until they start to caramelize, about 5-10 minutes.
- Stir in the French onion soup mix and beef broth, scraping any browned bits from the bottom of the pot.
- Return the roast to the pot, cover it, and place it in the preheated oven.
- Cook for 3 to 4 hours, or until the meat is tender and easily pulls apart with a fork.
- Serve with the onion gravy and enjoy your cozy meal!
Notes
Be careful not to overcrowd your pot when searing the meat; it’s better to do it in batches if your pot isn’t large enough.
