- 8 oz provolone cheese, sliced

- 4 low-carb tortillas
Instructions
- Gather and prep your ingredients: Start by slicing the beef into thin strips, and chop the bell peppers and onion.
- Sauté the vegetables: Heat olive oil in a skillet over medium heat. Sauté the onions and bell peppers until softened (about 5-7 minutes).
- Cook the beef: Increase the heat to medium-high, add the sliced beef, season with salt and pepper, and cook until browned (about 3-5 minutes).
- Melt the cheese: Reduce heat to low; place provolone slices over the beef mixture to melt completely.
- Prepare the tortillas: Spoon the beef and cheese mixture onto each tortilla and roll tightly.
- Crisp the roll-ups: Return the roll-ups seam-side down to the skillet; cook until golden brown on all sides (about 3-4 minutes total).
Notes
For an added flavor twist, try adding sautéed mushrooms or jalapeños. Ensure not to overcrowd the skillet when cooking.
