- 6.5 ounces semisweet chocolate, finely chopped
- 0.5 cup butter, cut into 8 pieces
- 3 eggs, room temperature
- 1/3 cup white sugar
- 2 tablespoons all-purpose flour
- 4 teaspoons unsweetened cocoa powder
- 1 pinch salt
Instructions
- Preheat the oven to 400°F (200°C). Grease and lightly flour four 6-ounce ramekins.
- In a double boiler, melt the chopped chocolate and butter together, stirring frequently for about 5 minutes. Remove from heat and let cool slightly.
- In a large bowl, combine the eggs and sugar. Beat with an electric mixer on high speed until pale and thick, about 5 minutes.
- Fold the melted chocolate into the egg-sugar mixture until combined.
- Sift in the flour, cocoa powder, and add a pinch of salt. Gently fold until just incorporated.
- Divide the batter evenly among the prepared ramekins and place them on a baking tray.
- Bake for 10 to 13 minutes, until the sides are set but the center is still jiggly.
- Allow the cakes to cool for 5 minutes before inverting onto plates or serving straight from ramekins.
Notes
Serve with a dusting of powdered sugar, vanilla ice cream, or fresh raspberries for a delicious contrast.
