  • 1 ounce lavender simple syrup
  • 1 ounce freshly squeezed lemon juice (about 1 small lemon)
  • 23 ounces sparkling water or club soda
  • Ice cubes
  • Lemon slices and fresh lavender sprigs for garnish

Instructions

  1. Make the Lavender Simple Syrup: In a small saucepan, combine 1 cup water, 1 cup sugar, and 2 tablespoons dried culinary lavender. Bring to a gentle boil over medium heat, stirring until the sugar is fully dissolved. Remove from heat, cover, and let steep for 15 minutes. Strain through a fine-mesh sieve to remove the buds. Let cool to room temperature.
  2. Prepare the Cocktail: In a cocktail shaker, add 2 ounces limoncello, 1 ounce cooled lavender simple syrup, and 1 ounce freshly squeezed lemon juice. Fill the shaker with ice and shake vigorously for about 10–15 seconds until well chilled.
  3. Assemble the Spritz: Fill a wine glass or Collins glass with ice cubes. Strain the limoncello mixture into the glass. Top with 2–3 ounces of sparkling water or club soda. Stir gently once to integrate.
  4. Garnish and Serve: Add a thin lemon slice and a fresh lavender sprig for aroma and visual appeal. Serve immediately and enjoy.

Notes

For a lower-sugar option, reduce syrup to ¾ ounce or use a half-sugar syrup. To make a pitcher for a party, multiply ingredients by the number of servings and add sparkling water just before serving to preserve fizz.
