A rich and tangy sour cream lemon pound cake with a glossy lemon glaze, perfect for any occasion.

- 1 cup (227 g) unsalted butter, room temperature
- 1 3/4 cups (350 g) granulated sugar
- 4 large eggs, room temperature
- 1 teaspoon vanilla extract
- Zest of 2 lemons (about 2 tablespoons)
- 1/4 cup (60 ml) fresh lemon juice (for batter)
- 1 cup (240 g) full-fat sour cream, room temperature
- 3 cups (360 g) all-purpose flour, spooned and leveled
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon fine sea salt
- Lemon Glaze:
- 1 1/2 cups (180 g) powdered sugar, sifted
- 2–3 tablespoons fresh lemon juice
- 1 teaspoon lemon zest (optional, for extra brightness)
Instructions
- Preheat the oven to 325°F (163°C). Grease and flour a 9 x 5-inch loaf pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream the butter and granulated sugar until light and fluffy.
- Add eggs one at a time, beating briefly after each addition. Mix in vanilla, lemon zest, and lemon juice.
- On low speed, alternate adding the dry ingredients and sour cream in three parts, beginning and ending with the dry ingredients. Mix just until combined.
- Scrape batter into prepared pan and smooth the top. Tap gently on the counter to remove air pockets.
- Bake for 55–70 minutes, or until a toothpick comes out with a few moist crumbs.
- Allow the cake to cool in the pan for 10–15 minutes, then invert onto a wire rack to cool completely.
- For the glaze, whisk powdered sugar and lemon juice until smooth, adjust consistency as needed. Pour over cooled cake and let set before slicing.
Notes
Use room-temperature ingredients for better emulsification. Overmixing can create a denser crumb.
