Ingredients

- 1 cup dark chocolate, chopped (about 170 g; choose 60–70% cacao for balance)
- 2 cups heavy cream (480 ml)
- 4 large egg yolks
- 1/2 cup granulated sugar (100 g)
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 325°F (160°C).
- In a saucepan, heat the heavy cream until just simmering, then remove from heat and add chopped chocolate; stir until melted and smooth.
- In a mixing bowl, whisk the egg yolks, sugar, vanilla, and salt until well combined.
- Slowly pour the warm chocolate-cream mixture into the egg yolk mixture while whisking constantly.
- Strain the mixture through a fine sieve into a pouring jug.
- Divide the custard mixture into 6 small ramekins.
- Place the cups in a baking dish and fill with hot water until halfway up the sides of the cups.
- Bake for about 30–35 minutes until just set around the edges.
- Remove from the oven, let cool to room temperature, then chill in the refrigerator for at least 2 hours.
- Serve chilled and enjoy.

Custards are rich due to heavy cream and dark chocolate; consider lighter options for fewer calories. Best when made ahead and chilled.
