- 2 cups whole milk
- 1.5 cups water or broth
- 8 oz pasta of choice
- 8–10 oz broccoli, finely chopped
- 2 cups shredded extra sharp cheddar cheese
- 1/4 cup plain Greek-style yogurt
- 1 tbsp butter or ghee (optional)
Instructions
- In a large pot, bring milk and water or broth to a gentle boil over medium-high heat.
- Add pasta and stir to separate pieces. Reduce heat to a low simmer; cook uncovered for about 10 minutes, stirring occasionally.
- Stir in the chopped broccoli and cook for 2–3 more minutes until pasta is al dente and broccoli is tender-crisp.
- Remove from heat, stir in cheddar, yogurt, and butter until melted and smooth. Adjust seasoning with salt and pepper.
- Serve hot and enjoy!
Notes
To avoid a gritty sauce, use freshly grated cheese instead of pre-shredded. Adjust broccoli cooking time for preferred texture.
