Description

A delicious and easy Parmesan crusted chicken with roasted potatoes and green beans for a satisfying weeknight dinner.


Ingredients

  • 2 boneless, skinless chicken breasts (about 68 oz each)
  • 1 cup grated Parmesan cheese
  • 2 cups baby potatoes, halved (about 1012 oz / 300 g)
  • 2 cups green beans, trimmed (about 8 oz / 225 g)
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon Italian seasoning (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix the Parmesan cheese, salt, pepper, and Italian seasoning.
  3. Coat the chicken breasts in the cheese mixture.
  4. On a large sheet pan, arrange the halved potatoes and drizzle with olive oil, garlic, salt, and pepper.
  5. Place the Parmesan crusted chicken on the sheet pan with the potatoes.
  6. Add the green beans around the chicken and potatoes, drizzling them with a bit of olive oil and seasoning.
  7. Bake for 25–30 minutes or until the chicken is cooked through and the potatoes are tender.
  8. Serve hot and enjoy!

Notes

For best results, use chicken breasts of similar thickness. Broil for 1–2 minutes at the end if the crust isn’t as brown as desired.
