Ingredients

- 2 slices of bread (sourdough or whole grain)
- 2 slices of cheese (mozzarella or cheddar)
- 2 tablespoons of pesto
- Butter (for spreading)
- Optional: Tomato slices
- Optional: Spinach
- Optional: Garlic powder or red pepper flakes
Instructions
- Heat a skillet over medium heat.
- Spread butter on one side of each slice of bread generously.
- On the unbuttered side of one slice, spread the pesto evenly and place the cheese on top.
- If desired, add tomato slices or spinach on top of the cheese.
- Cover with the second slice of bread, butter side facing up.
- Grill the sandwich for 3-4 minutes on each side or until golden brown and the cheese is thoroughly melted.
- Remove from skillet, slice diagonally, and serve hot!
Notes
Keep an eye on the sandwich while grilling to avoid burning. You can lower the heat if needed.
