A cozy grilled cheese sandwich infused with aromatic pesto, combining comfort and culinary creativity.


Ingredients

  • 2 slices of bread (sourdough or whole grain)
  • 2 slices of cheese (mozzarella or cheddar)
  • 2 tablespoons of pesto
  • Butter (for spreading)
  • Optional: Tomato slices
  • Optional: Spinach
  • Optional: Garlic powder or red pepper flakes

Instructions

  1. Heat a skillet over medium heat.
  2. Spread butter on one side of each slice of bread generously.
  3. On the unbuttered side of one slice, spread the pesto evenly and place the cheese on top.
  4. If desired, add tomato slices or spinach on top of the cheese.
  5. Cover with the second slice of bread, butter side facing up.
  6. Grill the sandwich for 3-4 minutes on each side or until golden brown and the cheese is thoroughly melted.
  7. Remove from skillet, slice diagonally, and serve hot!

Notes

Keep an eye on the sandwich while grilling to avoid burning. You can lower the heat if needed.
