Ingredients

  • 1 box (15.25 oz) red velvet cake mix (or homemade)
  • 1 cup buttermilk (if making scratch)
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp red food coloring (if not using pre-colored mix)
  • 1 cup cream cheese frosting (store-bought or homemade)
  • 1216 oz white candy melts or white chocolate
  • 12 tbsp coconut oil or vegetable shortening (optional)
  • Red cake crumbs or sprinkles for decoration
  • Lollipop sticks (24)

Instructions

  1. Preheat oven according to cake mix instructions (usually 350°F/175°C).
  2. Prepare and bake the cake in a 9×13 pan following package or recipe directions.
  3. Cool completely — chill the cake in the fridge for 30 minutes if needed for crumbling.
  4. Crumble the cooled cake into a large bowl until mostly fine crumbs remain.
  5. Add about 3/4 to 1 cup of cream cheese frosting and mix until moistened and holds together.
  6. Using a tablespoon, portion mixture into 24 even balls and roll to form smooth spheres.
  7. Place on a parchment-lined baking sheet and chill for 20–30 minutes until firm.
  8. Melt candy melts or white chocolate until smooth; stir in coconut oil if it’s too thick.
  9. Dip the tip of each lollipop stick into the melted chocolate and insert into each chilled cake ball about halfway.
  10. Dip each cake pop into the coating until fully covered, then sprinkle with crumbs or decorations before coating sets.
  11. Insert sticks into a foam block to allow coating to harden completely.
