- 1 lb (450 g) ground beef (or ground turkey for a leaner option)
- 4 medium potatoes (about 600 g total), diced into 1/2-inch cubes
- 1 small onion, diced (about 1 cup)
- 1 bell pepper, diced (any color)
- 1 cup (240 ml) tomato sauce
- 2 tbsp Worcestershire sauce
- 1 cup (about 113 g) shredded cheddar cheese
- 1 tsp garlic powder
- Salt and black pepper, to taste
- 2 tbsp olive oil (for cooking)
- Chopped green onions for garnish, to taste
Instructions
- Prepare the potatoes by rinsing, drying, and dicing them into 1/2-inch cubes. Optionally, parboil for 5 minutes to speed browning.
- In a large skillet, heat 1 tbsp olive oil over medium-high heat. Add potatoes in a single layer and cook, turning occasionally, until golden brown, about 8–10 minutes. Remove to a plate.
- Add the remaining olive oil to the skillet, then add diced onion and bell pepper. Sauté for 3–4 minutes until softened.
- Add ground beef to the skillet, breaking it up with a spoon. Cook until browned and no longer pink, about 6–8 minutes, draining excess fat if desired.
- Stir in tomato sauce, Worcestershire sauce, garlic powder, and season with salt and pepper. Simmer for 3–4 minutes.
- Return the browned potatoes to the skillet, stirring to coat with the sauce. Reduce heat and sprinkle shredded cheddar on top. Cover for 2–3 minutes until cheese melts.
- Garnish with chopped green onions and serve hot.
Notes
For extra warmth, add smoked paprika or chili powder. Use reduced-sodium options for a healthier dish.
