Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 lemons (juiced and zested)
  • 3 tablespoons olive oil
  • 2 garlic cloves (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 1 cup rice
  • Fresh herbs for garnish (optional)

Instructions

  1. In a bowl, mix lemon juice, zest, olive oil, garlic, thyme, rosemary, salt, and pepper.
  2. Place chicken breasts in the slow cooker and pour the lemon herb mixture over them.
  3. Add chicken broth and stir gently.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  5. About 30 minutes before serving, add rice to the slow cooker, ensuring it’s submerged in the broth.
  6. When done, fluff the rice and chicken with a fork, garnish with fresh herbs if desired, and serve.

Notes

For extra flavor, marinate the chicken overnight in the lemon herb mixture. Brown rice may require longer cooking time; add it with the chicken broth.
