Ingredients

- 4 boneless, skinless chicken breasts
- 2 lemons (juiced and zested)
- 3 tablespoons olive oil
- 2 garlic cloves (minced)
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 cups chicken broth
- 1 cup rice
- Fresh herbs for garnish (optional)
Instructions
- In a bowl, mix lemon juice, zest, olive oil, garlic, thyme, rosemary, salt, and pepper.
- Place chicken breasts in the slow cooker and pour the lemon herb mixture over them.
- Add chicken broth and stir gently.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours.
- About 30 minutes before serving, add rice to the slow cooker, ensuring it’s submerged in the broth.
- When done, fluff the rice and chicken with a fork, garnish with fresh herbs if desired, and serve.
Notes
For extra flavor, marinate the chicken overnight in the lemon herb mixture. Brown rice may require longer cooking time; add it with the chicken broth.
