Description

A delightful bar dessert featuring a tender, cake-like base and jewel-like pockets of sweet cherry filling, perfect for celebrations.


Ingredients

  • 1 cup (227 g) softened butter
  • 2 cups (400 g) granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups (360 g) all-purpose flour
  • 1 teaspoon salt
  • 1 can (21 ounces / ~595 g) cherry pie filling
  • Optional: 1/2 teaspoon almond extract
  • Optional: Zest of 1 lemon
  • Optional: 1/2 cup chopped toasted almonds or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Cream together softened butter and sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract (and any optional extracts or zest).
  4. In another bowl, whisk together flour and salt. Gradually add to the creamed mixture, mixing just until combined.
  5. Spread half of the batter into the prepared pan. Spoon cherry pie filling over it evenly.
  6. Drop spoonfuls of the remaining batter on top of the cherry layer.
  7. Bake for 35–40 minutes until golden brown and a toothpick comes out clean.
  8. Allow to cool completely in the pan on a wire rack before slicing into squares.

Notes

These bars can be stored at room temperature for up to 2 days, in the refrigerator for up to 5 days, or frozen for 2–3 months. Chill before cutting for cleaner slices.
