- 1 cup (227 g) softened butter
- 2 cups (400 g) granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 3 cups (360 g) all-purpose flour
- 1 teaspoon salt
- 1 can (21 ounces / ~595 g) cherry pie filling
- Optional: 1/2 teaspoon almond extract
- Optional: Zest of 1 lemon
- Optional: 1/2 cup chopped toasted almonds or walnuts
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Cream together softened butter and sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract (and any optional extracts or zest).
- In another bowl, whisk together flour and salt. Gradually add to the creamed mixture, mixing just until combined.
- Spread half of the batter into the prepared pan. Spoon cherry pie filling over it evenly.
- Drop spoonfuls of the remaining batter on top of the cherry layer.
- Bake for 35–40 minutes until golden brown and a toothpick comes out clean.
- Allow to cool completely in the pan on a wire rack before slicing into squares.
Notes
These bars can be stored at room temperature for up to 2 days, in the refrigerator for up to 5 days, or frozen for 2–3 months. Chill before cutting for cleaner slices.
