Description

Ingredients

  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 large egg
  • 1 1/8 cups granulated sugar (1 cup + 2 tablespoons)
  • 1/2 cup vegetable oil
  • 2 tablespoons buttermilk (or plant-based alternative)
  • 1 teaspoon vanilla extract
  • 3 extra ripe bananas, mashed
  • 1/2 cup chopped walnuts, plus extra for topping (optional)

Instructions

  1. Preheat the oven to 325°F (165°C). Prepare an 8×5-inch loaf pan: spray with nonstick spray and line with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, whisk the wet ingredients until well combined and slightly glossy.
  4. Gradually add dry ingredients to the wet mixture, folding gently until just combined.
  5. Fold in buttermilk, vanilla extract, mashed bananas, and walnuts until evenly distributed.
  6. Pour batter into the prepared loaf pan, smooth the top, and sprinkle with extra walnuts if desired.
  7. Bake for 60–75 minutes, checking for doneness at 60 minutes.
  8. Cool the loaf in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use very ripe bananas for maximum sweetness. Optional: Tent with foil if browning too quickly.
