  • 4 cups pound cake, cut into 1-inch cubes

Instructions

  1. Prepare strawberries: Place sliced strawberries in a bowl and sprinkle with 1 tablespoon granulated sugar. Toss gently and let macerate for 10 minutes; drain lightly if preferred.
  2. Whip cream: In a chilled mixing bowl, pour the cold heavy whipping cream. Add powdered sugar and vanilla extract. Whip until soft to medium peaks form.
  3. Cube pound cake: Cut pound cake into roughly 1-inch cubes.
  4. Assemble layers: In parfait glasses, layer about 2–3 tablespoons of cake cubes, then 2–3 tablespoons of macerated strawberries, and a generous dollop of whipped cream. Repeat to create 2–3 layers.
  5. Garnish and rest: Top each parfait with a mint leaf and chill for up to 60 minutes before serving.
