Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium heat. Add diced chicken, season with salt and pepper, and cook until golden and cooked through (about 6–8 minutes).
- In a separate pot, prepare the white rice according to package instructions.
- Once the chicken is cooked, stir in the sweet corn and elote sauce, allowing the mixture to heat through (2–3 minutes).
- To assemble the bowl, serve a scoop of rice topped with the chicken mixture.
- Garnish with fresh cilantro and a squeeze of lime; adjust seasoning as needed.

Notes
